Manuscript cookbook containing an extensive collection of traditional and regional Mexican recipes, including many savory and dessert dishes, as well as examples of European cuisine, possibly compiled for use in a convent. The wide range of sweets and desserts, including antes, buñuelos, cajetas, camotitos, canutos nevados, puchas (from Oaxaca), turrones, bojarascas, and jericayas, suggest the present manuscript was composed in a convent as private households would be unlikely to focus on making sweets in such large quantities. The recipe book also includes several savory dishes which highlight the merging of native Mexican and European cuisines. These include Italian ravioli, a Flemish stew, and a Spanish morcilla (black pudding). There are also several dishes which combine European ingredients like parsley, oregano, cilantro, capers, vinegar, pork, almonds, walnuts, and saffron alongside Mexican ingredients such as frijoles, maize (corn), jitomates (tomatoes), turkey, indigenous fish (for example bobo)and different types of chillies. Pre-colonial cooking techniques, mostly notably the comal (griddle pan) and the molcajete (mortar and pestle) are described herein. Also present are pre-columbian dishes such as tortillas and tamales, as well as typical Mexican cuisine such as Mole Oaxaqueño and chicken with mole. Within these, the manuscript frequently differentiates between regional variants, especially those from Oaxaca, Puebla, and Veracruz. The geographical diversity and abundance of recipes suggests this recetario originated in a wealthy convent, possibly in Mexico City. The greater part of it is written in one consistent and neat hand with easy to follow instructions. The final forty-eight pages contain recipes that were subsequently added to the manuscript in two separate hands
