Manuscript recipes compiled during the period circa 1798- 1836, written in at least twenty-six different hands. María Dolores Bustamante's name appears on the title page (which is dated 1836) and in an ownership inscription on the verso of the final leaf: "Soy de Dn. Dolores Bustamante." The manuscript contains over 400 recipes representative of Mexican cuisine, many incorporating ingredients specific to Mexico and Central America. Recipes include Mole Gachupin (no. 13, 2nd gathering); Quesadillas travieras (no. 28, 2nd gathering); Conserva de Xoconostles (a cactus fruit; no. 34, 2nd gathering); Conserva de Chiles de rellenar (no. 39, 2nd gathering); a torta made with zapote (no. 71, 2nd gathering); Enchilados (no. 104, 2nd gathering); Albodigon (no. 115, 2nd gathering); Morisqueta (no. 137, 2nd gathering); Albondigas rellenas (no. 147, 2nd gathering); Gallina enchilada (no. 154, 2nd gathering); Gallins rellenas de dos modos (no. 155, 2nd gathering); Mole poblano (verso of 4th leaf, 3rd gathering); Caxetas (i.e. cajetas, recto of the 1st leaf, 6th gathering); and Dulce de papaya (recto of 12th leaf, 7th gathering). A few of the recipes are initialed
