Manuscript, in Spanish, containing recipes for numerous Mexican dishes. "... dates from 1826 and is written by several hands, clearly having been the manuscript of one woman [Victoriana Salas] with friends adding recipes when asked. The arrangement is roughly by either main ingredient (e.g., "carnero") or type of preperation (e.g., "torta"). The recipes are spare but the range is comprehensive: from soups to desserts to seasonal dishes, etc. Ingredients are chiefly local to Mexico with only a few being imported."--Bookseller's description
